How to Use Agar With Acidic Foods

Note: Agar is a complex carbohydrate that is obtained from various kinds of algae or seaweed by bleaching, drying and extracting with water. It is then dried to from flakes, granules, powder or strips. Agar is widely used in both desserts and non-sweet dishes in Asia, and in some foods it can be used as a substitute for gelatin.
