Note: Gelatin is a colorless, odorless and flavorless mixture of proteins obtained by the prolonged boiling of animal bones, connective tissues and other parts. When dissolved in a hot liquid and then cooled, it forms a jelly-like substance used as a thickener and stabilizer in molded desserts, candy and a variety of other foods and industrial products. Several substitutes, such as agar (which is made from a seaweed), are available for people who want to avoid animal products, although each has somewhat different properties and can require changes to recipes.
