How to   Keep Vegetables Fresh          


Fresh vegetables not only look better than old, wilted vegetables. They also have better nutritional properties. However, some types of vegetables, such as carrots, mushrooms and zucchini, tend to age rapidly after being brought home from the store.

Fortunately, it is easy to significantly extend the freshness of such vegetables. All that is necessary is to put them in a small paper bag, close the end tightly, and place the bag in the refrigerator. The end can be twisted closed, or it can be closed with a rubber band or clip.

Another idea is to cook the vegetables immediately upon return from the store instead of waiting until preparing the meal, and then refrigerate them for later use. For example, it just takes a few minutes to wash, slice and stir-fry mushrooms and then place them in a covered dish in the refrigerator.
